Farro Fresh

Perfect summer dish!

This bean salad is my current favourite!  It’s great to take to BBQ’s, beautiful with fish,chicken or beef and with tacos, fajitas ….. the list goes on.
For a delicious and easy summer meal I paired it with BBQ’ed steak and guacamole all wrapped in warm tortillas.

Delilicious Californian Bean Salad

1 c dried black beans (or 1 tin of black beans)
1 tin of corn kernels (or 3 cobs of fresh corn)
1 red capsicum
3 stalks of celery
3 spring onions
handful of coriander
Delilicious Red Wine Vinaigrette

If you are using dry beans cook in plenty of unsalted boiling water until al dente.  Rinse under cold water to cool off.  If using a tin, also rinse thoroughly along with the tinned corn.  If using fresh corn try char grilling it on the BBQ first before taking the corn of the cob.

Chop the celery, spring onions and capsicum all to a similar size of the corn and mix all the ingredients together.  Finally add chopped coriander and the dressing.
This salad is best made a few hours ahead for the flavours to develop.

BBQ Steak

Sirloin or scotch fillet
Seasoned with salt and pepper, some ground corriander, cumin and smoked paprika, then seared on the BBQ.  Rest the meat for 5 minutes before slicing.  While the meat is resting warm the tortillas on the BBQ.
