My version of Snickers – Caramel & Peanut Slice
Confession time, I have a serious weakness for snickers bars. So I decided to try and make my own version.
Base
½ cup self raising flour
½ cup plain flour
½ cup cocoa
¾ cup coconut
½ cup brown sugar
100g butter
3 Tblspns Peanut butter
Mix all the dry ingredients together. Melt the butter and peanut butter together and then mix into the dry ingredients. Press this in to a 24cm square tin lined with baking paper and bake for 10 minutes at 180 degree C oven.
Caramel
2x tins of condense milk (or 800g)
75g butter
½ cup golden syrup
2 cups roasted and salted peanuts
Put all the ingredients, except the peanuts, in a pot and bring to the simmer. Stirring constantly, to stop it sticking or burning on the bottom, cook for 10 minutes until the caramel thickens and turns light brown.
Pour the caramel over the cooked base and bake for 10-15 minutes. While still hot scatter over the peanuts.
Icing
250g dark chocolate
½ cup cream
Chop the chocolate into small pieces and melt this with the cream in a bowl set over a pot of simmering water. Mix until smooth and then pour over the cooled caramel.
Once set cut into small pieces as this is very rich.
