Budding young talent help us celebrate 1 year
Last week Nourish celebrated our first birthday in conjunction with the launch of BMWs new 1 Series car. Guests were treated to a gorgeous menu of local food and at the end some very special cupcakes.
The cupcakes, over 200 of them, were lovingly made by a couple of entrepreneurial teenagers, Holly and Liam. With loads of enthusiasm, patience and clean hands the two friends toiled over an entire day weighing, measuring, mixing then finally baking cupcakes. Here’s their recipe if you’d like to try it at home:
Liam & Holly’s Cupcakes (makes 16)
115g softened butter
100g sugar
2 large eggs, lightly beaten
140g self raising flour, sifted
½ tspn vanilla extract
1-2 T milk
Turn the oven on to 200 degrees celcius
Put 16 paper cupcake cases into two 12-hole muffin tins
Cream butter and sugar (1-2 minutes), add eggs and continue beating. Fold in the flour using a metal spoon. Stir in the vanilla & the milk
Put a spoonful of mix into each paper case. (You literally want 1 spoonful in each case. Don’t be tempted to fill them to the top)
Bake in the pre-heated oven for 15-20 minutes until golden brown.
Remove from oven and leave to cool in the tins for 5 mins then move them to a wire rack to cool completely
Liam & Holly iced the cupcakes with a simple white butter icing adding a dash of strawberry essence for flavour. Some cupcakes were left with the plain white icing and a slice of strawberry on the top.
Others had a decoration made with Fondant icing, coloured with food colouring. They rolled the fondant out using icing sugar to prevent it sticking on the rolling pin and cut shaped using cookie cutters. Fondant decorations will keep for ages in an airtight container. Remember to put a layer of baking paper between the decorations to stop them sticking to each other.
